Photo by Güzin Mut @guzinmut / I was walking down the ghats in Varanasi, India, along the holy River Ganges when I noticed this group of pilgrims. I walked over and asked the lady in the gorgeous yellow sari at the front if I could take a picture of the group. The second I raised my camera, the group cheered up joyfully and gave me their friendliest smiles. This picture just makes me happy!

Photo by Güzin Mut @guzinmut / A cacao pod usually contains 30 to 40 seeds—cacao beans—embedded in a white pulp. Cacao beans are the basis of the sweet dream we call chocolate. From the dried and fully fermented seeds, cocoa solids (a mixture of nonfat substances) and cocoa butter (the fat) can be extracted. After fermentation the spelling changes, and cacao beans are labeled as cocoa. While touring a coffee farm in Monteverde, Costa Rica, I had the opportunity to taste the raw seed, which was more bitter than sweet. The dried, fermented, ground seeds called nibs tasted more familiar. About 400 dried beans are required to make one pound (450 grams) of chocolate.
